酸浆米线

昆明,是米线王国,不过,作为原材料的米线,在昆明主要有两种:酸浆米线和干浆米线。分酸浆和干浆,是做法和工艺上的不同,而在形态上来说,酸浆的是粗米线,干浆的是细米线。
Kunming is the rice noodles kingdom. However, there are mainly two kinds of rice noodles in Kunming: sour rice noodles and dry rice noodles. Their cooking makes the difference between them. In other words, they are crude and fine noodles.

对于地道的昆明人来说,吃米线,指的就是吃酸浆米线,相对于干浆米线,酸浆米线味道略微带些酸味,口感偏软,这是老昆明人多少年多少辈形成的口味。
For authentic Kunming people, eating rice noodles, refers eating crude noodles, because it tastes more slight and soft. This is how ages formed tastes of old Kunming people.
烧饵块加油条
Roasted rice cakes
烧饵块是昆明非常日常的小吃,看看满大街的烧饵块店就知道了。
This is very common snack in Kunming. Look at the bake shop on the main street.
饵块本身就很实在,再加根油条,米面都有了,特别顶饱。两者在火上现卖现烤,拿在手里暖,吃在嘴里糯,再根据个人喜好涂抹上花生酱、芝麻酱、甜酱油、牛肉酱、香菇酱、卤腐等,鲜香味美,怪不得昆明人爱拿它当早点。
Cakes itself are already well-done, then add fried dough sticks, and together with noodles it will make you especially full. Just roasted cakes are so warm in your hands and glutinous in your mouth. They are then smeared with peanut butter, sesame sauce, sweet soy sauce, beef sauce, mushroom sauce, brine rot and so on. No wonder Kunming people like to use them as breakfast.

LaoNai potato
老奶洋芋,顾名思义:牙口不好的老奶奶也能吃,可以想见这道菜是多么的绵软了。
As the name implies: bad tooth grandma can also eat it, you can imagine how soft this dish is.
老奶洋芋是昆明人的家常菜:干辣椒、花椒、葱花入油锅炸出香味,倒入煮熟捣成泥状的土豆,再辅以酸菜略微翻炒即可。
It is a common dish of Kunming people: dried pepper and onions put into a frying pan, pour into boiled mashed potatoes, and then slightly fry for a while.
老奶洋芋,不仅口感绵软,而且味道十足,说甩快餐店里的土豆泥几条街也不为过,而且此菜做法简单,无论老少,都极为喜爱。
LaoNai potato has not only soft taste, but it is also full of flavor. It is similar to the mashed potatoes in the fast food restaurants. This dish is simple, many people are very fond of it.
蘸水苦菜

对于昆明人来说,最普通的蔬菜也能吃出味道吃上席,苦菜就是其中之一。

苦菜性凉,具清热解毒之功效。用苦菜做汤,色泽清新可人;汤味略苦,但用来解油解腻,那效果可是杠杠滴。
Bitter vegetable are cool and has the effect of clearing away heat and detoxification. Soup made with bitter vegetables is refreshing and has nice color. Soup tastes bitter, but it is used to relieve greasy oil, and the effect is dripping.
蘸水苦菜,除了苦菜,蘸水那一定也是不可或缺的。干辣椒火上略烤,捣碎,配以花椒面、盐巴、香油、味精,想要再辣点儿的加些小米辣,各家都有各家的口味,相信你一定记得你家的!

官渡粑粑

北方有馅饼,云南有粑粑。昆明最出名的粑粑叫官渡粑粑,官渡粑粑自然是原产地官渡古镇的好吃,不过寻常街巷里做的味道也不差。

Pea flour salad can be easily found in Kunming streets, but there is another way of cooking, that is familiar to the old Kunming people. Fried pea flour is characterized by its crispy skin, soft and tender filling, and excellent taste.
油炸豌豆粉对于火候的把握要求比较高,再加上需油炸这道工序,所以做的人越来越少了,不过你要是有心找的话,还是能找到的,而且物以稀为贵,想验证你是一个正宗的吃货?出发吧!

小刀鸭
XiaoDao duck
相较于前面的家常菜和小吃,小刀鸭算是一道馆子菜了,而且是滇系名菜。鸭子选用云南特有的品种小麻鸭,以松毛结为燃料,入炉烘烤。
Compared with the homemade dishes and snacks in the past, this duck is considered as a rear dish, and it is a famous in Yunnan. Must be used Yunnan special breed ducks, and pine nuts to bake in the oven.
火热出炉后的小刀鸭,表皮黄脆酥焦,肉质松软,甜嫩离骨,色鲜味美,香气四溢,让人一见之下自然是心动不如筷动。
